Harissa-spiced pork with Mediterranean veg-recipe
A hint of harissa, which is a Moroccan chilli paste, and fresh orange give this healthy vegetable-packed dish real oomph!

Ingredients
- 500 g(11b 2oz) pork tenderloin, cut
into strips
- 1 tbsp harissa
- 1 zest and juice 1 orange
- 3 tbsp olive oil
- 400 g (14 oz) mixed antipasto vegetables
- 400 ml hot vegetable Stock
- pinch saffron
- 2 x 110 g packs couscous optional
Instructions
- In a bowl, mix the pork with the harissa and orange zest, and season well. Heat1 tablespoon of the oil in a frying pan, add the pork and stir-fry for about 5 minutes. Add the antipasto and heat through,
- Meanwhile, mix the orange juice with the stock. In a saucepan, bring it to a simmer with the saffron and remaining oil, then add the couscous, stir, cover, turn off the heat and leave to steam for 5 minutes. Fork through just before serving with the pork and vegetables
