Turkey meatballs with red pepper sauce

  • 500 g 11b 2oz pack British turkey mince
  • 1 onion very finely chopped
  • 1 tsp dried oregano
  • 2 tbsp breadcrumbs

For the sauce

  • 1 tbsp olive oil plus extra for frying
  • 1 onion chopped
  • 2 red peppers deseeded and chopped
  • 1 garlic clove crushed
  • 1 tbsp tomato puree
  • 400 g can chopped plum tomatoes
  • 500 g 11b 2oz spaghetti
  • Parmesan grated, to serve (optional)

  • First make the sauce: heat the oil in a large pan and fry the onion and peppers for 5 minutes, until starting to soften. Add the garlic, fry for a minute, then stir in the puree, tomatoes and seasoning. Cook on a gentle heat, uncovered, for about 15 minutes, until the sauce is thick. Remove from the heat and blend for a smooth sauce, if you like.
  • For the meatballs, combine the mince, onion, oregano and breadcrumbs. Season
    and mix well. Form into balls. Fry in a little oil in 2 batches until well browned
  • Reheat the sauce in a saute pan, bring to a simmer then add the meatballs to cook through. Meanwhile, cook the spaghetti according to pack instructions, then drain and divide between 4 bowls. Spoon over the meatballs and sauce and serve with Parmesan, if you like.
